Ever feel like you just need a day off from cooking, or from thinking about what to do for dinner tonight, again. Sometimes it is nice to have something stored away in the freezer that will make a quick no brainer meal.
When our local stores offer great deals on Chicken, I stock up. It only takes a few minutes to prepare 5-10 easy meals. You could just take the chicken, divide it out into bags and freeze, but that means that you will still have to think about what to make for dinner. This method is quick and easy and stores away great dinner ideas right in your freezer.

How to package your freezer chicken meals:
All you need is 5-10 quart or gallon sized zipper bags. I prop open each bag on the counter and start adding my sauces to the bags. (Remember to label & date the bags first, or you may forget which is which. You don’t want a craving for BBQ chicken turn into a chicken stir-fry kinda night.)
Below I have 3 simple sauce combinations to add to your bags. Last week I found some chicken on Sale for .99¢ a pound. Now I have to admit, I am usually about organic (most of the time) but sometimes a good deal is hard to pass up, especially when you are feeding it to growing teenagers with hollow legs.
So back to business, once you have your bags propped up (it helps to fold the top of the bag down), fill each one with your sauces. Our favorite sauces for the freezer include BBQ Sauce, Teriyaki, and Taco. I have also done lemon and Italian before and they all turned out fantastic.
After you have your bags prepped, you can start to process your chicken. You can either keep your chicken whole, sliced, or diced. If you are planning some meals to cook on the BBQ then I would leave then whole or in larger pieces, for stir-fry I cube them into 1-2in pieces.
Divide your cut chicken into bags. You may need to double or triple the sauce ingredients below depending on the amount of chicken you are wanting per meal. Close your bags and push out as much air as possible. I usually lay them out flat on the counter and gently push the air out towards the opening, then quickly seal. I find it is best to place your bags on a cookie sheet before placing in the freezer. Sometimes my freezer is full and I don’t have room for one.
A couple times I had forgotten to use a tray under the chicken and the chicken froze between the shelving wires and was very difficult to remove. Lesson learned!! You can freeze the chicken for up to 1 year.
How to use your chicken?
Still not sure what to make for dinner? What sounds good? BBQ Chicken, Teriyaki Chicken and Rice, Tacos? No problem. Grab a bag out of the freezer and dump it into your crockpot or Instant Pot / Electric Pressure Cooker. Cook on low for 4-6 hours in the Crockpot. If it’s late and you need a faster lazy meal, dump it into your Instant Pot and press the chicken button. You may need to add a few more minutes due to the fact that it is frozen. (Cook to manufacturers to directions) .
Once your chicken is cooked, you can make BBQ Chicken Wraps, BBQ Chicken and Green Beans, Teriyaki Chicken Stir-Fry, Burrito’s, Fajitas, Taco Salad. There are lot’s of options. Now go get your Lazy on and keep an eye out for good deals on chicken.
Quick Freezer Chicken
- 1+ lb Chicken
Teriyaki Chicken - Per Pound of Chicken
- 1/4 cup Teriyaki Sauce
- 1/4 tsp Ground Ginder
Taco Chicken Sauce - Per Pound of Chicken
- 1 tbsp Taco Seasoning
- 1/4 tsp Garlic Powder
BBQ Chicken - Per Pound of Chicken
- 1/2 cup BBQ Sauce of choice
- Label & Date bags. Divide Sauces into Zipper Bags,
- Add whole or cubed chicken to each bag. Remove air and close.
- Place on cookie sheet then freeze for 1 plus hours. Once frozen, remove tray and store chicken in the freezer
Crockpot / Instant Pot Method
- Dump contents of bag into a crockpot or Instant Pot. If you froze your chicken flat, you may need to turn crockpot on high first to melt the chicken down if you are lazy like me, or pre thaw enough to get it to fit.
- Cook 4-6 hours on low in Crockpot or use the chicken button on the Instant Pot for perfectly moist chicken.
